Champagne & Truffle
We are pleased to launch the first in a series of seasonal tasting menus in Indigo drawing upon Executive Chef Dominic Teague’s thirty years of experience. The celebratory Champagne & Truffle menu has been created by Dominic to showcase the incredible quality of ingredients in his kitchen. Over the years Dominic has gone to extraordinary lengths to build a network of trusted independent producers from across the British Isles who support his commitment to seasonal and sustainable cooking that is ever-changing and always exciting.
For this menu Dominic has looked back at ingredients that he has loved cooking throughout his career, and truffles were the natural choice for this special menu. He remembers picking up a truffle for the first time under the watch of three-Michelin starred chef Roger Vergé. From there a lifelong love of the noble ingredient was born, and now he’s sharing that love with this menu dedicated to truffles.
As the first in the series we are delighted to be working with the prestigious Champagne Billecart-Salmon, the independent house is known for its gastronomic champagnes. Each course of Dominic’s menu will be accompanied by a different cuvée, including the Brut Sous Bois and Nicolas François, each one chosen to match wonderfully well with Chef’s autumnal flavours and truffles.
