To kick of the summer, we are delighted to bring you a summer-long cocktail menu in collaboration with Sipsmith, the pioneers of the craft gin movement and a fellow B Corp company.

 

The signature from the menu is our Rooftop Bee’s Knees, a zesty twist on the classic cocktail. This cocktail is made with Sipsmith London Dry Gin, Drambuie, bitters, lemon, orange and honey from our very own rooftop bees!

 

 

 

But to take it right back to where it all began…

 

Our resident buzzy bees were originally a passion project for our Revenue Director, Corin Burr. ‘I’ve always wanted to look after bees…I was absolutely delighted when we introduced our first colony up on the roof,’ he recalls.

 

 

Such has been the buzz of activity since, and we now proudly serve our rooftop honey to our guests in Indigo, and now in our delicious new summer cocktails.

 

Sipsmith’s Master Distiller, Jared Brown, notes that our Lobby Bar has the ‘perfect tranquillity with a view of the pre-theatre crowd emerging from the Strand. It is impressive that they committed themselves to achieving B Corp status, and I am overjoyed to partner with such an exceptional bar team in such elegant surroundings.’

 

In addition to the Rooftop Bee’s Knees, we will be serving a fruity Scarlett Sip mixed with London Dry, Martini Fiero Vermouth, Chapel Down Rosé, Peychaud’s bitters, strawberry and soda.

 

 

And for a refreshing alcohol-free sip, our Garden Bliss features Sipsmith’s FreeGlider, elderflower, ginger beer, cucumber, lime and mint.

 

 

 

While this menu will be available throughout summer, it is seasonally inspired and will evolve in the autumn to celebrate the flavours of the season.
