We’re delighted to announce that Indigo restaurant has recently been awarded Coeliac UK Gluten Free accreditation, and is the first luxury hotel restaurant in the UK to be awarded. Accreditation aims to make eating out stress-free for people with coeliac disease and is awarded to venues that have proven to safely cater for gluten free.
Executive Chef Dominic Teague cut both gluten and dairy from the lunch and dinner menus back in November 2015 in response to demand, but his priority has always been to create beautifully prepared dishes, without compromising on quality ingredients or taste.
The Indigo menu incorporates the finest seasonal ingredients, carefully sourced from the British Isles. From chilled Wye Valley asparagus with lemon mayonnaise and fresh truffle to beer battered day boat fish, with hand-cut chips, crushed peas and tartare sauce.
